For the Butter Chicken Sauce:

  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 can (15 ounces) tomato sauce or crushed tomatoes
  • 1 cup heavy cream or coconut milk (for a dairy-free option)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. Make the Meatballs:
    • In a large bowl, combine ground chicken, breadcrumbs, milk, chopped onion, minced garlic, ground cumin, ground coriander, garam masala, paprika, turmeric powder, cayenne pepper, chopped cilantro, salt, and pepper.
    • Mix until well combined, but avoid overmixing to keep the meatballs tender.
    • Shape the mixture into meatballs, about 1 to 1.5 inches in diameter.
    • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.

    • Stir in the heavy cream or coconut milk, and season with salt and pepper to taste. Simmer for an additional 5 minutes until the sauce has thickened slightly.
  4. Combine Meatballs with Sauce:
    • Add the cooked meatballs back into the skillet with the sauce. Gently toss to coat the meatballs in the creamy butter chicken sauce.
    • Simmer for another 5 minutes over low heat to heat the meatballs through and allow them to absorb some of the sauce.
  5. Serve:
