  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (15 ounces) creamed corn
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 package (8.5 ounces) cornbread mix (such as Jiffy)
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder (optional)
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley or green onions, for garnish (optional)

Instructions:

  1. Preheat Oven and Prepare Baking Dish:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, combine the drained whole kernel corn, creamed corn, sour cream, and melted butter. Stir until well combined.
  3. Add Cornbread Mix:
    • Sprinkle the cornbread mix over the corn mixture. Stir until the cornbread mix is fully incorporated into the wet ingredients.
  4. Add Cheese and Seasonings:
    • Fold in the shredded cheddar cheese. Season with garlic powder (if using), salt, and freshly ground black pepper to taste. Mix until evenly distributed.
  5. Transfer to Baking Dish:
    • Pour the corn mixture into the prepared baking dish, spreading it out evenly with a spatula or spoon.
  6. Bake:
    • Bake in the preheated oven for 45-50 minutes, or until the casserole is set and golden brown on top. The edges should be bubbly and lightly browned.
  7. Serve:
    • Remove the Corn Casserole from the oven and let it cool for a few minutes before serving.
    • Garnish with chopped fresh parsley or green onions, if desired.
    • Serve warm as a side dish or as a main course with a side salad.

Tips:

  • For added texture, you can mix in additional ingredients such as diced bell peppers, jalapeños, or cooked crumbled bacon.
  • Customize the cheese by using your favorite variety, such as Monterey Jack or pepper jack for a spicy kick.
  • Leftover Corn Casserole can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.

Variations:

  • Make it gluten-free by using a gluten-free cornbread mix.
  • Add a layer of crushed crackers mixed with melted butter on top before baking for extra crunch.
  • Experiment with different herbs and spices, such as smoked paprika or cayenne pepper, to suit your taste preferences.

Corn Casserole is a comforting and satisfying dish that pairs well with a variety of main courses or stands alone as a delicious vegetarian option. Its creamy texture and sweet corn flavor make it a hit at any gathering or family meal!
